The Belém Scale

Five axes, each scored on a zero-to-ten register. The composite is the arithmetic mean, rounded to one decimal.

№ 01 · Pastry

A shatter-thin lamination. The Committee prizes visible flake count, an audible crack, and a butter-forward finish.

№ 02 · Custard

A yielding, barely-set egg custard with a pronounced lemon peel note. Over-setting is penalised more severely than under-setting.

№ 03 · Blister

The burnished, almost-black caramelisation of the custard surface. The ideal specimen exhibits between four and seven distinct blisters.

№ 04 · Cinnamon

Fragrance, restraint, and the grind. Absence is tolerated; excess is not.

№ 05 · Temperature

Internal temperature at time of service. A cold specimen is, as the Organization has long held, not a specimen at all.
